2 golden or green kiwi fruit, cut into 12 pcs per kiwi
8 strawberries, cut into quarters
1 ripe mango, cut into chunks
8 honey tomatoes, cut into quarters
½ head of iceberg lettuce, torn into bite size pieces
2 cups plain 'live' yoghurt
4 dried apricots, cut into small pieces
1 tablespoon raw sunflower seeds
Cinnamon powder to taste
1. Place all the fresh fruit (the kiwi fruit, strawberries, mango and tomatoes) and lettuce into a mixing bowl, add in the yoghurt, and mix well
2. Transfer the mixture to serving bowls, top with the dried apricots and sunflower seeds, and sprinkle with cinnamon powder to taste.
Note: It is not necessary to peel the kiwi fruit
3. The skin is completely edible and full of goodness. The golden kiwis have smoother skin than their fuzzy green cousins, so you may want to try them first if you decide to eat the peel.
